It seems windows 7 Pro is shutting down my HDD. How can I.....?

How can I (Windows 7 settings) keep my HDD spinning? TIA!

You probably need to go to the Power options and change the plan so
that it doesn't turn off the HD after do many minutes of non-usage

Some drives spin themselves down independently of Windows.

But you gave us no idea which brand & model you have...
